Tuna Melt Lunch
January 22, 2009 at 11:14 pm | In Uncategorized | 4 CommentsThis morning I got up and decided to eat another piece of my Banana Nut Bread that I made last night for breakfast. It was still as delicious as it was last night and gave me plenty of energy to last through my workout this morning.
This morning’s workout was pretty intense. We did our normal ab routine and then went for 30 minutes on the elliptical. I went 2.28 miles in the thirty minutes and boy did a break a sweat. If you would’ve told me 2 months ago that I could last that long on the elliptical I would’ve laughed in your face. My body is starting to do things that I never thought possible. Pretty insane.
After our workout I had a chocolate cookie, but I didn’t have my camera on me so I didn’t get a chance to take a picture of my bad snack. It was a small cookie though and I stopped myself at one. I am proud of my self that I had the will power to stop at one.
For lunch, I wanted something warm so I decided to make a tuna melt sandwich. My melt included:
White Albacore Tuna mixed with:
- Diced red pepper
- a teaspoon Dijon Mustard
- Sun-dried tomatoes
I put the tuna mixture on two slices of whole wheat bread which had a smear of Roasted Garlic Hummus. I topped the tuna mixture with a slice of baby swiss cheese and a sprinkle of feta cheese. I then grilled it on my George Foreman Grill and voila, a yummy, heartwarming lunch. It turned out amazing. I definitely will be making this again.
Tonight so many good shows are on I have to pick which ones to watch. I think I will watch the new BONES and watch the new Ugly Betty and Grey’s Anatomy tomorrow on the internet. I really wish I had a DVR. To those people enjoying there DVR’s out there, I envy you and your abilities to save your favorite shows to watch later!

Your tuna melt looks delicious! I had Foreman but returned it because I knew I would never want to clean it, but now I want one again! And your banana bread looks heavenly.

you should really get one! they really aren’t that hard to clean you just wipe it down. I have a big one and a little one. the little one is perfect for individual meals.
